placed a cleaned Lake Trout with skin into a bag with Salt and olive oil
Seal it up
Dump it in a pot of water that was pre heated with a sous vide machine, temp set to 115 if you are going to sear it
45mins to 1 hour later (depending on thickness) take out and pat dry
add searing powder to the skin side only
sear on high temp w/ grape seed oil until golden brown for the skin
serve on plate w/ your favorite sauce or plain lemon squeezed on top!
Alternatives can be any trout or salmon
